Rendering happens with a browser PDF engine, so the output matches what you see on screen: fonts, vector drawings and embedded images are rasterised together into a flat picture at the resolution you request.
Picking the right output resolution
Screen use is well served by rendering at roughly 100 to 150 DPI, which keeps files small and text legible. Print needs 300 DPI or more, and the resulting files are correspondingly larger. If your converted page looks soft when zoomed, the fix is a higher render resolution rather than upscaling the exported image afterwards, because upscaling cannot recover detail that was never rendered.
What converting to an image changes
A JPG is pixels. Text inside it is no longer selectable, searchable or accessible to screen readers, links stop working and file size can grow for text-heavy pages. That is an acceptable trade when you need a picture, but keep the original PDF for archiving and for anyone who needs to copy text out of it. If you need selectable text back later, run the image through the Image to Text OCR tool.
